I am making my list of things to cook this week, and I was wondering if any of you had any good recipes you have tried that you really like. I am trying to stay away from beef, and eat mostly chicken and salmon. I dont like peas or spinach, but everything else is fine. Thanks for your help! =)

I know you said you don’t like spinach but I hate spinach in everything except for calzones. You can also put in fat free cheese and make it even better. I eat calzones with just cheese and spinach. There is also healthy egg salad sandwiches- fat free mayo, eggs, and whole wheat bread. Also soups- I make my own so it won’t be so salty. You should try quinoa or couscous they are really good for you and you can make a stir fry and add meat to it like salmon.

You will LOVE these enchiladas! My mom and I sure do and we make them all the time. We also make extra filling to freeze for when we want enchiladas quickly and there is no time to make the filling. Just reheat filling, build enchiladas, and bake! These are high in protein and fiber and very filling!
Black Bean Chicken Enchiladas
3/4 lb boneless skinless chicken breasts, cooked and shredded
3 slices bacon (or 3-4 sausage links)
2 garlic cloves, minced
1 1/2 cups picante sauce, divided
1 (16 ounce)can black beans, undrained
1/2 cup bell peppers, chopped (green or red)
1 teaspoon cumin
1/4 teaspoon salt
1/2 cup green onions , sliced
12 (6 inch) flour tortillas
1 1/2 cups monterey jack cheese , shredded
–In a skillet, cook bacon (or sausage) until crisp. Drain on a paper towel and crumble. Pour off all but 2 tablespoons of bacon fat from the skillet. Add chicken and garlic to the skillet and cook until garlic is fragrant. Stir in 1/2 cup picante sauce, black beans, chopped pepper, cumin, and salt. Simmer until thickened, about 8 minutes, stirring occasionally. Stir in green onions and bacon. Spoon 1/4 cup bean mixture down center of each tortilla and top with 1 tablespoon cheese. Roll up and place seam-side down in a lightly greased 9×13 inch baking dish. Spoon the remaining picante sauce evenly over enchiladas. Top with remaining cheese. Bake at 350 degrees for 25 minutes.
Applebee’s Honey Grilled Salmon
3/4 cup honey
1/3 cup soy sauce
1/4 cup dark brown sugar, packed
1/4 cup pineapple juice
1 lemon, juice of (about 2 tablespoons)
2 tablespoons white distilled vinegar
2 teaspoons olive oil
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
4 (8 ounce) salmon fillets (without skin)
–Make the sauce by combining all ingredients in a medium saucepan over medium/low heat. Stir occasionally until sauce begins to boil, then simmer uncovered for 15 minutes or until syrupy. Watch the sauce closely to be sure it doesn’t bubble over. Preheat barbecue grill to medium heat. Rub each salmon filet with vegetable oil, then add a light sprinkling of salt and pepper. Grill the salmon for 4 to 7 minutes per side or until done. Serve salmon with a small cup of the honey pepper sauce on the side.

chicken quasedias(i think thats how its spelled) get a package of tortilla wraps. cook chicken and cube it.. when done put it on one side of the tortilla wrap. coat with low fat cheese. if you prefer you can add green onions too. then wrap it having it held by a tooth pick. bake them on a cookie sheet for 10 minutes. in a 300 degree oven.. they are so yummy.
