I usually try to cook healthy using lots of veggies, lean meats, and spices for flavor. I have 3 young children and am often running around, and was wondering if anyone had success using the slow cooker to make relatively easy and healthy recipes? If so, I would be thankful for any recipes suggestions or ideas. Thanks!

You can do roast (beef or pork) hams, whole chickens or just breast, etc….
Very good and not just for soup!
We got a cookbook with ours, we have two different size ones now.

i use my slowcooker all winter long and have never added a can of soup to any dish in it. you can totally wing it once you get a handle on proportions (ie, how much liquid you need to meat/veggies).

yes it can, you should go out to the market and purchase veggies, some tomeatoes, potatoes, beans , green leafy veggies, carrots, onions, and mean of your choice, go with lean meat, beef is good, use spices according to what your kids enjoy, if there is a certain spice or sauce you like to use then put it in, use chicken stock or beef stock, and some garlic powder. mix it up, but make sure not to over do spices, kids might notic that. you might want to also use pasta with the dish and croutons. tomoatoe sause is good with the stocks, make sure you cut the veggies up to bite size pieces depending how small ur kids mouth are. you may want to add chesse on the end, try useing mazzorella, parmagane, brie, i sometimes add rice in the meal, pasta will do well, good eating.

This is one of my favorite recipes. It’s actually a Weight Watchers recipe, so it’s very healthy for you! Only 1 point per serving, which works out to between 80-100 calories per serving, give or take.
Summery Ratatouille
Combine 6 large tomatoes, chopped; 4 medium zucchini, thinly sliced; 2 large onions, thinly sliced; 2 bell peppers, seeded and chopped; 2 garlic cloves, minced; 1 large eggplant, chopped; 2 teaspoons dried basil; 2 teaspoons dried oregano; salt; and ground pepper to taste in a slow cooker. Cover and cook on high until tender, 4-5 hours. Makes 6 servings, 1 cup each.

Yes it is healthy and so easy i put something in for dinner sometimes frozen and it is done and cooked thru and perfectly seasoned and delicious.

I think I see what you need.
Slow cookers are great for meals that you want to prepare but be able to walk away from. We use slow cookers in our business because it permits us to be doing other things while cooking and not worrying about something burning.
You can make vegetable chili, or lean hamburger chili, lean beef stew, chicken and vegetables, bean soups and so forth. The trick is to know how much moisture to put in and when to put vegetables in so that they don’t overcook. I have a slow cooker, it’s been fantastic. What i did was buy a casserole recipe book, it’s great because at the end of every recipe it says wether or not you can do it in a slow cooker. My favorite so far is spanish chicken casserole, it has chicken thighs/fillets/drumsticks whatever you want, with potatoes, chicken stock, white wine, flat-leaf parsely, garlic, onion, pine nuts, lemon juice and rosemary. Served on steamed green beans. Fairly healthy (there’s only a little bit of wine in it). Great to make big meals so you can take lunch to work or have other meals ready made when you’re busy.

Don’t use canned stuff. Buy organic meat and vegetables and make your own stocks, etc.
My favorite slow cooker recipe is:
Season chicken parts with salt and pepper. Brown in a skillet.
Fill the slow cooker one third full with potatoes cut in 1 inch cubes, carrots in 1/2 cubes, celery ribs into 3 or four pieces. Dice one onion, mince two cloves of garlic, and stir all together. Place the browned chicken pieces over the vegetables.
Pour in one cup of white wine you would drink. Add a bay leaf. Cover, set on low, and leave all day – 8 to 12 hours.
Remove the bay leaf, the chicken bones and skin, and thicken the juice if you want a gravy.
Great with hot, homemade biscuits.
This has endless varieties; and the wine can be substituted with stock.

The type of slow cooking you are referring to with extensive use of canned soups is from a bygone era. A lot of people have been very busy coming up with new, healthier versions of everyday favorites adapted for slow cookers.
My suggestion is to visit your local library and check out some slow cooker cookbooks, there are many contemporary ones available, and even quite a few that focus on healthy cooking.

Not even twelve months ago I was struggling. I got tired of cooking the same boring slow cooker meals over and over. I was overdone with recipes that look good but never work; I had no real success in slow cookin’ – only simulated compliments. What a mess!

I then tried my local library – no joy there either.
I thought I’m sure to get a copy on Amazon or some other on-line bookstore. I looked and I searched and I just couldn’t find a copy – anywhere.
Later that week I got back in touch with my master chef friend and explained to him that I tried and tried to find this elusive book but to no avail.
He just laughed at me and explained that I would have difficulty finding it anywhere, and others like it.
I guess he just wanted to see how determined I was to get hold of a copy. But I was very determined. In the end I suggested that he loan me his copy on the proviso that I absolutely promise to return it.
But not only was this book hard to get hold of, I spent a considerable amount of time attaining the rights to re-publish this incredible work. I had to contact a specialist attorney, who, finally got me exclusive permission to re-publish.
The Secret To My Slow Cooking Success Today Was Hiding in This Long Lost Culinary Classic
What a discovery! The book was called “Tested Slow Cooker Recipes That Work” by Arthur Edson.
Go ahead and try looking for it – it’s nearly impossible to locate.
I tried out that Arthur Edson book in the very first evening and then another three times before I really appreciated the wisdom within its covers. The guy was a sheer genius.
Arthur Edson is the long forgotten inventor of the slow cooker. He submitted his thesis – Design and construction of an electric cooker for slow cooking – for the degree of Bachelor of Science in Electrical Engineering in 1917, University of Washington.
