you can cook most anything in the foil. the key is to have some liquid of some sort so it doesn't dry out...fish, pork, potatoes, vegetables, beef, chicken, you name it you can cook it...add your liquid , season your food, and prepare

If you don't have a copy already get a copy of "The Joy of Cooking." This is a cookbook every cook, especiall young ones, should have.

Fanny Farmer's Boston Cooking School is another classic that seems to have fallen from favor in recent years

Abny cookbook produced by the Editors of Cooks Illustrated is well worth it's price. Every recipe is tested seventeen ways from Sunday. If you follow the recipes closely they are all guaranteed "No Fail."

The Betty Cocker and Better Homes & Gardens Cookbooks are also books that should be in every kitchen

As you well know there are thousands of chuch cookbooks published every year. And some of them are mighty good ones. One church cookbook stands above the crowd. Bayou Cuisine, produced by St. Stephens Episcopal Chuch, Indianola, MS has gone through two Editions and I don't kow how many printings over the last 40 years. If you can find one, I highly recommend it, and not just because some of my recipes are in it.

Pineapple-cicles: Freeze a pineapple chunk in pineapple juice in ice cube trays and add to O.J in the mornings for a little tropical bump!

I like Chicken Cranberry Pasta salad, served cold. You can really add whatever you want. (basic ingredients: pasta, mayo, sugar, vinegar, chicken, cranberry, nuts. others are: celery, grn pepper, sub cranberry for grapes...)

All things cucumber!

I love to mix lemon + cucumber in a pitcher with water+ice and let it sit for like 30 min...SUPER REFRESHING! Or adding fresh sprigs of mint to water is good too!

Angel food cake is a light yummy dessert for when it's hot hot hot!

Grill fish or chicken in a citrus sauce (Orange, lime, lemon...). Go an extra step and make kabobs with veggies of choice.

Dilute grape (or any kind) of juice with water and make your own popsicles.

Cold pastas are great! Grilling is always good. Cucumbers are uber refreshing. And you can never really go wrong with fresh fruit!

Make a biscuit cake. You don't need an oven and kids love it. You can find the recipe here:

Grilled PBJs

Make peanut butter and jelly sandwiches. Melt margarine in skillet and slowly brown both sides of sandwiches.

There are many good cookbooks out there, but I'd like to recommend a magazine, Cook's Illustrated. It's the magazine that started America's Test Kitchens. Their recipes are wide and varied. They have been tested and tweeked until they arrive at a good foolproof method and calls for all the qualities one seeks out of a particular recipe. I got a great Jambalaya recipe from them as well as various roasts. Once I tried making their chocolate chip cookies, they were so good I can't make them any other way now.
